BBQ Bacon Wrapped Pork Loin Strips

Makes 9-12, depending on actual size of the slices/weight of pork loin or chops

To prepare:
1 lb. Boneless pork loin, or thick cut boneless pork chops cut into 2″ square strips that are 5″ long (*if you are going to buy the boneless thick cut chops, purchase 3 of them and slice them into thirds, lengthwise)
1 pound package thinly sliced bacon
Lawry’s Seasoned Salt or other BBQ Seasoning of choice
1/2 C bbq sauce

Preheat oven to 425 F.  Place a wire rack over a baking sheet.  Season pork loin strips lightly with seasoned salt. Wrap bacon around strips of pork loin, secure ends with toothpick if desired. Sprinkle bacon wrapped strips with additional seasoned salt or any BBQ rub of choice. Bake for 20 minutes.  Remove baking sheet.  Glaze par cooked bacon covered pork loin with BBQ Sauce.  Return to oven for 5 minutes until bbq sauce is thickened and shiny.  Serve warm with additional sauce on the side. *It is critical to use thinly sliced bacon. If you don’t, your loin pieces will be far beyond cooked before your bacon is!

Bacon Caramel Apple Mini Pies

Makes 8 mini pies

1 1/4 C flour
2 tsp sugar
1/2 tsp salt
1/2 C butter, cold, cut into cubes
4 TBSP ice water

Combine flour, sugar and salt, whisk well. Cut butter into dry mixture until it resembles coarse crumbs. Add water and fluff with fork until moistened. Pat into a disk, wrap in plastic wrap and refrigerate for 30 minutes.

Bacon Apple Filling:
3 Granny Smith Apples, peeled, cored and chopped
1/2 C sugar
2 TBSP flour
Pinch of salt
1 tsp vanilla
1/2 tsp ground cinnamon
3 strips thick cut bacon, chopped

Combine apples, sugar, flour, salt, vanilla and cinnamon. Stir to combine. Fold in chopped bacon.

Crumble Topping:
1/4 C butter
1/4 C sugar
1/2 C flour

Mix together with fingertips until combined.

Additional ingredients for garnish:
1/2 C caramel sauce
3 strips thick cut bacon, chopped

Assembly and Baking:
Divide pie crust into 8 portions. Press each portion into a standard size muffin cup. Add bacon apple filling evenly, heaping over the top, as filling will reduce during baking. Top with crumble. Bake in a preheated 350 degree oven for 30-35 minutes until golden brown on top. Remove from oven, let cool a bit before drizzling with warm caramel sauce and garnishing with additional chopped bacon.
